Cheesy Protein Packed Tofu Scramble

The staple of all staples. This tofu scram is a Sunday must. Our family makes it every week because it’s quick, easy, delicious, and protein packed. Oh and the best part of it all… you don’t need to press the tofu. Can we get a hell yeah (hell yeah).

Once you start on scrams, you cant stop. It’s a go-to breakfast or lunch AND you can clean out your fridge by throwing any veggies you have on hand in it. Here are the simple steps:

  1. Crumble tofu into a bowl
  2. Add the spices and mix
  3. Cook the veggies in a pan for 5-7 minutes
  4. Add the tofu
  5. Cook until hot
  6. Add vegan cheese (some of our fav brands are Vevan, Daiya, Violife)
  7. Cover and let the cheese melt
  8. Plate and top with hot sauce, scallions (any herb), and a dollop of vegan cream cheese if thats your thing.

If toast is your jam, pop a piece in the toaster and then pile your scram on it. Basically like an open faced “egg sandwich”. There really are limitless possibilities when it comes to scram combos. Make it a cheesy broccoli scram, a spinach-mushroom, a pepper and onion topped with salsa… yeah we went there.

Description

Cheesy, scrumptious, and protein packed… this vegan & gluten free tofu scramble is the perfect breakfast or lunch. It’s a weekly staple in our home. It comes together so quickly and tastes incredible. Always hitting the spot.


Ingredients

Scale
  • 1 block extra firm or firm tofu
  • 1 tsp garlic powder
  • 1/2 tsp turmeric
  • 1/2 tsp paprika (sweet or smoked)
  • 1/4 tsp cumin
  • 1 tbsp nutritional yeast
  • Salt & pepper
  • Optional 1/2 tsp umami seasoning
  • 1– 8 ox container baby Bella mushrooms
  • 1 small white onion
  • 2 c packed spinach
  • Desired amount of vegan cheese (1/2-1 c shreds)

Instructions

  1. Remove the tofu from the package and pat dry with some paper towels (optional)
  2. Using your hands or a fork, crumble the tofu into a bowl
  3. Add the spices and use a spatula or wooden spoon to mix
  4. Chop the onion and wash/slice your mushrooms. Prepare any other veggies you may be adding
  5. Cook the veggies (besides the spinach) in a pan on med/high heat
  6. When they’re just about finished, add the tofu mixture and spinach to the pan
  7. Cook on medium heat until the tofu is heated through and turns yellow in color (from the turmeric). Cook for longer and higher if there’s too much liquid
  8. Add cheese. You can mix it in or leave it on top. Cover so it melts
  9. Enjoy with hot sauce, fresh herbs, scallions, and/or cream cheese for extra creaminess!
