
We love Ted for blowing up the internet with his biscuits. Riffing off of his idea, we’ve created a vegan shortbread recipe that is soft, buttery, and flavorful. We use brown sugar and a pinch of cinnamon to elevate this lil biscuit. So some may call this “Brown Sugar & Cinnamon Shortbread” but SEO seems to like “Ted Lasso Biscuits” a little more. They truly are the perfect treat and pairs extremely well with coffee or tea.
A quick background for those of you that are unfamiliar with Ted Lasso. It is a popular, feel good show on Apple TV+. Ted delivers these delicious biscuits to his boss every morning in a cute pink box. She is dying to know which bakery he gets them from since they are THAT good. *Spoiler Alert* We find out that Ted makes the biscuits himself everyday! Can I get a Ted in my life??
Sometimes when I eat a very dense and buttery shortbread I feel a little bit like a sicko. The greasy butter gets to my head, IDK can anyone else relate? Now I don’t want to call these “healthy” because that might deter some people but they are definitely healthier than your average shortbread. You’d never know if I hadn’t told you! We use apple sauce to replace some of the butter and it makes for a perfectly moist and flaky biscuit. Our version of the Ted Lasso Biscuits are easy to make, lightly sweetened and have a unexpected depth of flavor!

While we were making these we couldn’t help but reminisce on the iconic “Baked in a Buttery Flaky Crust” video. Sharing it here so you can laugh while making biscuits. Does it get any better?? NO.

Ted Lasso Biscuits (vanilla shortbread)

Description
Buttery, flaky, and soft. These vegan vanilla shortbread biscuits melt in your mouth. They are the perfect treat to have with tea or coffee or while watching Ted Lasso.
Ingredients
- 1 3/4 cups flour
- 1/2 cup brown sugar, packed
- 1/2 cup regular sugar
- 1 tbsp cornstarch
- 2 teaspoon cinnamon
- 1/4 teaspoon of nutmeg
- Sprinkle of salt
- 4 oz vegan butter, cold and cubed (we used Miyoko’s)
- 1/3 cup apple sauce
- 1 tablespoon vanilla
Instructions
Preheat oven to 350 and prepare an 8×8 parchment lined pan.
Add dry ingredients (flour, brown sugar, regular sugar, cornstarch, cinnamon, nutmeg, salt) to the food processor and blend until combined.
Add in the wet ingredients (butter, apple sauce, vanilla). Blend until a crumble forms.
Place in the prepared pan. Press down with a spatula or your hands until the dough is consistent throughout.
Bake at 350 for 28-30 minutes. Lightly add in fork marks. Let set for 30 minutes before slicing.
